Fried Yam and Eggs


Growing up in Nigeria, we used to eat fried yam and eggs for breakfast. It used to be one of my favorites food. Even street vendors sale yam on the street which is always amazing. It has been a while since I had yam, so when hubby came home with yam, I knew I had to revisit my childhood memory of having fried yam with eggs. Although you can make yam in different ways, I have always found frying it to be the easiest. It may not be the healthiest but once you have your eggs on the side, it becomes a balanced diet. But is not something you want to eat on a daily bases. Here is my recipe for my fried yam and eggs, I hope you enjoy it as much we did.



Ingredients 


Small yam

2 cups of Canola Oil for frying
1 tsp of salt
Hot Pepper
5 eggs
Onions
1 Fresh Tomato
1/2 Red pepper
A handful of Spinach
2 tsp of olive oil (for the eggs)


What to do


Step 1
: Making the Yam


Step 2: Pile and cut up the yam


Step 3: Once done, add 2 cups of canola oil to a frying pan and let heat for 2 mins
Step 4: Put your cut up yam in the hot oil and let fry. While your yam is frying start making your eggs but still keep an eye on your yam.
Fry each side of the yam for at least 5 minutes or until it looks crispy
Once done put yam on a plate covered with paper towel to absolve the excess oil

Making the egg

Step 5: Gather and cut up your ingredients (onions, red pepper and tomatoes)
Step 6: Whisk your eggs and add 1/2 tsp of salt and pepper and mix together
Step 7: Add  2 tsp of olive oil in a sauce pan, let stand for a 30 seconds, add your onions, tomatoes and red pepper, let stand for 1 min or until it starts making the frying noise. 

Step 8:  Add your spinach and mix together, let stand for 1 minute and then add your eggs

Step 9: Scramble and fry your eggs until how you like it (people like there eggs in different textured, i like mine to have a little burnt crust)


 Step 8: Once it meets your heart desire ( it should look like this) dish out and let cool


 Step 9: Your yam should be ready by now, take out from the oil and put on a plate with paper towel for the oil to absolve.

 Step 10: Serve with your eggs and enjoy
