Chicken with Sweet Pepper Stew



During one of the snow days, I had the opportunity to make this recipe for my two favorite men. Lets just say that Chiagoziem eat rice the whole day.  This recipe is very easy and doesn't take a lot of time or energy to make. The recipe is also good for those people who are tried of making stew with just tomatoes. Is time to try something new and trust me, you are going to be hooked. Ingredients
4 bell pepper
Cooked Chicken
Chicken broth
1 onion
1 glove of garlic
1 tsp of parsley
Olive or Vegetable oil
Salt and Pepper 


Step 1: Put Red pepper, half an onion and garlic in a blender and puree


 Step 2: Pour the puree mix into a small pot and cook/ reduce for about 10 minutes or until the water has evaporated







 Step 3: In a sauce pan, add 2 tsp of oil, cooked chicken and saute' for a few minutes or until each side is golden brown. Add the other half of onion.

Step 4: Add the reduced mix to the chicken, a cup of chicken broth and parsley and let simmer.


Step 5: Cook for an additional 5 minutes, add salt, pepper to taste. Serve and enjoy!!!
